So I think I’m going to start doing a daily vegetarian recipe just because I feel like it. I don’t really know. It’s summer and I’m bored.
This is an Asian style vegetable/tofu sauté mix.
I used:
A few asparagus stalks
A handful of cherry tomatoes
Half of a yellow squash
A clove of garlic
And extra firm organic tofu
Peanut oil
Rice wine vinegar
Chili oil (if you don’t have this, sirracha works just fine)
Salt
Pepper
When I season things, I just kind of eyeball it… So add everything until you think it tastes good!Place the tomatoes and squash in a sauté pan over medium heat and add seasoning.
While that is going, add the asparagus to a pot of boiling water. After 5ish minutes, take the asparagus out and add it to the sauté pan with the tomatoes and squash.
Once the vegetables are finished sautéing (this should take about 5-10 minutes depending on how you like your vegetables cooked) put them on a plate.
Put a 1/2 inch slice of tofu in the pan and add seasoning. Sauté for around 5-10 minutes on each side.
And that’s it. Enjoy!
